XamarinForms DisplayActionSheet on MacOS lists the items in the reverse order to iOS and Android.
Eg DisplayActionSheet with a list "1","2","3" gives this GUI layout

iOS/Android

  +--------+
  + TITLE +
  +--------+
  + Item 1 +
  +--------+
  + Item 2 +
  +--------+
  + Item 3 +
  +--------+
  + CANCEL +
  +--------+

Mac OS it gives the layout in the reverse order

  +--------+
  + TITLE +
  +--------+
+ Item 3 + <---- Note how Item 3 is at the top of the GUI display on the Mac
  +--------+
  + Item 2 +
  +--------+
  + Item 1 +
  +--------+
  + CANCEL +
  +--------+

Changes are needed in the Platform.cs file for the MacOS backend to fix this. I thought of a few fixes:- either by adding the buttons in reverse order (and handling the revised tag value) or using the .Frame property of each button to put the buttons in a different order.
