When creating an extension method and writing the params such as: this string value when typing "this" I'm getting an intellisense type popup "You_should_not_call_base_in_this_method"

This isn't MonoMac that I'm using and it should not occur when creating extension methods IMHO.
Mike, the problem is that we are not adding "this" to possible completions for static methods and this is allowed to create extension methods, see screencast
