Using the Xamarin Studio 6.0 Pre-Release and Xamarin.iOS 220.127.116.11, I created a blank project to try running on an Apple Watch device. I'm getting AOT errors.
My understanding from the 6.0 release notes is that this should work on device.

We do not yet support running code on devices. From the release notes:

Ok, understood. Would you please notify whoever manages that XS 6.0 preview to clarify that as well. It was confusing to several of us reading that and the iOS release notes.
Between forum posts, release notes and blog posts I'm sure it's hard to keep everything in sync. From my perspective it's difficult to determine which notes are most current and reliable.
Is there an open user voice or something where we can upvote watchOS2 support? I'll go hunting.

That's a misunderstanding. We have the tools to deploy apps. However the mono runtime for watchOS 2 (bitcode, coop-sgen and arm7k support) is not completed yet and, as you found out, the toolchain is not bug free either.
The XS release notes describe what the IDE can do, not what the Xamarin.iOS (or Mac or Android) products ships. In cases of previews the delta can be significant, like the IDE exposing incomplete features or the SDK/tooling having features not visible in the IDE.
The Xamarin.iOS releases notes (or preview post) will be the most accurate/up-to-date source of information about the tooling/SDK for iOS.
watchOS 2.0 support is still a work in progress and we'll continue to do periodic previews until we have a complete, stable solution to offers.
