In MSBuild you can do the following:

<ItemGroup>
   <Projects Include="a.csproj">
       <Configuration>Platform=OSX</Configuration>
    </Projects>
   <Projects Include="b.csproj">
       <Configuration>Platform=Linux</Configuration>
    </Projects>
</ItemGroup>

<MSBuild Projects="@(Projects)"/>

Today in xbuild this does not work as you can only specify the properties for the MSBuild Task itself.

So you need to do it like that:

<MSBuild Projects="a.csproj" Properties="Platform=OSX"/>
<MSBuild Projects="b.csproj" Properties="Platform=Linux"/>
