The code used by Xamarin.Forms to check the iOS version number is extremely lazy:

int num = int.Parse (UIDevice.CurrentDevice.SystemVersion.Substring (0, 1));
Forms.isiOS7OrNewer = new bool? (num >= 7);

This is going to break when iOS 10 is released.
