When I place a Picker in a Stacklayout with Orientation set to Horizontal, the Picker element will get a width of 0px on Windows Phone Silverlight 8.1.

XML Code example:
<StackLayout Orientation="Horizontal">
      <Picker Title="Sort by" x:Name="pickerSort"/>   
</StackLayout>

Setting WidthRequest to a value higher than 0 will set the Picker's width to the set value.

Hi Niels, you need to specify your picker HorizontalOptions to FillAndExpand it will work as expected.
