UITableViewRowAction has four properties that can be altered:
Currently it seems that there is no property within the MenuItem class to change the background. However we do have access to the style(IsDestructive/Not - Which is a Red or White background), and Title.
Some other thoughts to this would be the ability to set the TitleColor of the Button within the MenuItem via something along the lines of:
[[UIButton appearance] setTitleColor:[UIColor orangeColor] forState:UIControlStateNormal];
Finally, a request of having the ability to swap out one's implementation of UITableViewRowAction(Say a native implementation to be swapped in? I don't know the logistics on this from the Engineering side)
Allows further customization of the MenuItem/ContextAction
