Xcode 5.1 changed it's simulator support (and it's not backward compatible, different libraries being used).

Xamarin.iOS 7.0 was released just in sync with Xcode 5.0 and cannot handle the changes that Apple later made in Xcode 5.1.

You'll need to update to a more recent version of Xamarin,iOS (e.g. 7.2+) to have updated tools that can work in both Xcode 5.0 (or earlier) and 5.1.
