I'm bit behind on updates to xamarin and Xcode so finally got around to try to move things forward a bit but when I've done everything I think I should, I get a pretty meaningless error when trying to rebuild any existing apps or a new 'empty' app...

That is a very old version of Xamarin.iOS. Please update Xamarin.iOS too.

That version of MonoTouch is old (about 2 years old). Since then Apple changed the format of (some) .plist files in their SDK to be in a binary format (instead of XML).

Your two choices are:

* using a newer version of Xamarin.iOS (which handles both XML and binary .plist);

* use an older version of Xcode (e.g. 4.4) and iOS SDK (e.g. 5.1) that only incldues XML .plist files.
